  • 1/4 lb pork
  • 2 tbsp Soy sauce
  • 1 tsp Rice wine vinegar
  • 1 tbsp corn starch
  • 1/2 tspn brown sugar
  • 1/2 tspn sambal oelek or chili paste
  • wonton wrappers

  • 2 cups chicken broth
  • 3 green onions chopped
  • 1 inch ginger chopped
  • 2 cloves garlic chopped
  • 2 Thai chilies chopped
  • 1/2 tspn fish sauce
  • 1 tspn turbinado sugar or coconut sugar
  1. Mix all the wonton ingredients except for the wonton wrappers. Refrigerate for 3 hours
  2. Place 1 tbsp of pork mixture in the middle of a wonton wrapper.
  3. Brush water along all the edges of the wonton wrapper.  This will allow the wrapper to seal when we fold it.
  4. Fold top top right corner of the wrapper to the bottom left corner of the wrapper.  Pinch to seal the edges.
  5. brush water onto 2 ends of the wonton that now is a triangle.  Fold one side to the other and pinch to seal.
  6. Steam wontons  for 25 minutes
  7. Bring chicken broth to a simmer.
  8. Add all the broth ingredients and let simmer for 5 minutes.  Add salt to taste
  9. Place 2-3 wontons in a bowl and pour broth over the wontons.

Chocolate Truffles

Posted by on Jan 3, 2016 in Uncategorized | 0 comments

  • 1 C 60% chocolate chips
  • 3/4 C heavy whipping cream
  • 1 Tbsp instant espresso powder
  • 2 Tbsp cocoa powder
  1. Place chocolate chips into a glass or metal bowl.
  2. Heat whipping cream over the stove on medium until the slightest rolling boil.  Stir often to prevent scorching the cream.
  3. Add espresso and stir until well incorporated.  Take off the stove and pour over the chocolate chips and let sit for 1 minute to allow the hot cream to melt the chocolate chips.
  4. Stir until smooth.  Place in refrigerator for 1-2 hours or until mixture hardens up.
  5. Place cocoa powder into a bowl.
  6. With a spoon scoop up a teaspoon of the hardened mixture and roll into a ball.   Place the balls into the cacoa powder and cover with the powder.  *(work quickly as mixture will start to melt due to the warmth of your hands)
  7.  You can eat these immediately or place them in the refrigerator for later.  Makes between 15-20 truffles.

Peanut Butter Pie

Do any of you watch American Horror Story(AHS)?  I’ve been watching the latest season “Freak Show” and I am hooked again.  Dandy, played by Finn Wittrock,  is my favorite character this season.  Wittrock plays “man child sociopath” to perfection.  I look forward to Dandy’s escapades every week 🙂
Anyway, This past episode, Dandy and his mother Gloria were having dinner at their usual opposite ends of the lavish dinning table. During the scene,  Gloria, had this picture perfect dessert on her plate.  It was a berry tart.  And while this post is not for a berry tart it is for an equally delicious  dessert… a peanut butter pie like tart.
It also happened to be my MIL’s birthday later in the week so it all seemed fitting since she too loves PB. 🙂
