Chocolate Truffles

  • 1 C 60% chocolate chips
  • 3/4 C heavy whipping cream
  • 1 Tbsp instant espresso powder
  • 2 Tbsp cocoa powder
  1. Place chocolate chips into a glass or metal bowl.
  2. Heat whipping cream over the stove on medium until the slightest rolling boil.  Stir often to prevent scorching the cream.
  3. Add espresso and stir until well incorporated.  Take off the stove and pour over the chocolate chips and let sit for 1 minute to allow the hot cream to melt the chocolate chips.
  4. Stir until smooth.  Place in refrigerator for 1-2 hours or until mixture hardens up.
  5. Place cocoa powder into a bowl.
  6. With a spoon scoop up a teaspoon of the hardened mixture and roll into a ball.   Place the balls into the cacoa powder and cover with the powder.  *(work quickly as mixture will start to melt due to the warmth of your hands)
  7.  You can eat these immediately or place them in the refrigerator for later.  Makes between 15-20 truffles.

Peanut Butter Pie

Do any of you watch American Horror Story(AHS)?  I’ve been watching the latest season “Freak Show” and I am hooked again.  Dandy, played by Finn Wittrock,  is my favorite character this season.  Wittrock plays “man child sociopath” to perfection.  I look forward to Dandy’s escapades every week 🙂
Anyway, This past episode, Dandy and his mother Gloria were having dinner at their usual opposite ends of the lavish dinning table. During the scene,  Gloria, had this picture perfect dessert on her plate.  It was a berry tart.  And while this post is not for a berry tart it is for an equally delicious  dessert… a peanut butter pie like tart.
It also happened to be my MIL’s birthday later in the week so it all seemed fitting since she too loves PB. 🙂

Thai Roasted Chicken

I’m not really a chicken person.  Chicken breast, in my opinion, is the most boring cut of meat.  Since our household is divided, on the dark vs light meat front, we tend to cook the whole chicken around here.  The idea of roasting a chicken for many people, sounds daunting.  I assure you it is not.  It is probably the easiest way to prepare a chicken. First off, it’s ready to go.  There is no scoring, skinning, cubing or filleting involved.  Just marinate it for a couple of hours and pop it in the oven.

Shredded Beef Taco Meat

So we just moved into a new house and my husband is driving me CRAZY with his OCD for cleanliness.  I  knew shiny floors would be a bastard to keep clean but  this tile is gorgeous!   It’s not like we have just a little of it… no we went all out and covered the whole house in it…minus the bathrooms which house the honed version of this tile. 🙂   I do have to admit, that it looks damn good, but it also perfectly showcases every little spec of dust like a ring on display at Cartier.

Of course it bothers the both of us.  However, I’m more laid back about these things.  Clean it once a week and let the dust fall where it may in between cleanings.   Honestly,  I just take my glasses off and voila!  Out of sight out of mind.

The other half of course is neurotically on high alert searching for every paw/foot print and spec of dust.  The result upon his finding an unacceptable combination of these things results in a complete mental breakdown filled with “OMG look at these friggin floors”… “this was a mistake they get so dirty “… “what are we going to do with these floors?”… “the world is coming to an end”… “should we get the dogs  socks”…   If there was an  award for over dramatizations, he would win it hands down.

Oh sweet egg cream how you make a stressful day fade away…

If you’ve never had an egg cream, this is what you’re missing: rich, creamy chocolate, bubbly goodness. The origins of the egg cream are a bit mysterious.  Some say the egg cream was the original milkshake. Back in the day, they would mix sweet cream, an egg and chocolate then top  it off with soda.  Kinda sounds like a chocolate soda of sorts.   Fear not, as there is no longer raw eggs in the egg cream.  The egg cream is now a simple 3 ingredient drink that is sure to please your sweet tooth.

Potato Soup

Mmmmm… Potato soup.  There have been 2 times in my life, to date, where potato soup reached a level of satisfaction that made my taste buds go choir Ahhh* .  The first was with Au Bon Pain’s potato creme cheese soup, the second more recent with my late Grandmother-in-law Dawn’s potato soup.  The latter is a something so delicious, it had to be shared here today.  The soup was prepared by my mother-in-law Vicky, and when I inquired about this family recipe I was expecting to to tackle something complex with secret ingredients.  Oddly, the recipe is not complex. The soup has only have 6 ingredients and 6 easy steps!  How can it be?  Well, sometimes great recipes don’t have to have 20 ingredients or 20 steps. Sometimes simple can be refreshingly delicious.  Enjoy!
